Use Elasticsearch 7.x in GDK

While Elasticsearch 6.x is supported, as Elasticsearch 7.x support was introduced in gitlab!22859 (merged) (%12.7) we should use Elasticsearch 7.x as much as possible. https://docs.gitlab.com/ee/integration/elasticsearch.html
