Explore replacing InfluxDB with the Prometheus InfluxDB exporter

A customer suggested the idea that instead of an actual full InfluxDB instance that we could use the Prometheus InfluxDB exporter, which essentially just converts InFluxDB data to be scraped by Prometheus. They've went ahead and tested this and found that it works.

This is a potentially great solution to explore here as we're already thinking of removing InfluxDB since it's not part of the GitLab stack like Prometheus is.

Task is to explore this and convert our dashboards accordingly.
