Restructure GraphQL queries/mutations/fragments in ~/releases/queries/

  Is there any reason we don't structure these as:

  ../releases/graphql/queries
  ../releases/graphql/fragments

  ?

  This folder layout is new to me so I am quite curious! 😄 Are we influenced by how we generate the frontend fixtures?
