Clients for Elasticsearch and OpenSearch

Allow the gem to call ES and OS.

We have a dependency conflict in gitlab where we can't upgrade the elasticsearch gem version because we rely on it for both elasticsearch and opensearch. We want to move away from that.

Now the gem uses the elasticsearch-ruby gem for ES and opensearch-ruby gem for OS.
