As part of the KiCad 8 migration, lets organize the schematic a bit
better. While here, we're fixing two bugs and re-doing the PCB, to avoid
noise from the regulator under the ESP.

Since git add --patch is not really easily possibly with KiCad files,
and fixing the bugs caused quite some re-routing, the regulator issue
was taken in as well.

This obviously also includes an update to the documentation, which is
now more our own style.
