MailFlow runs fine on Mail 10.0 - 15.x, but fail on 16.x because of
major internal changes in Apple Mail. Document this and invite input
from contributors with a better understanding of the platform.

Arrange for the installer to ad-hoc sign the bundle automatically on
macOS 11.x and later, rather than leaving this as a manual task for
users.
