Add mid month update video and end of month showcase to Incubation Engineering handbook

Why is this change being made?

In Incubation Engineering we added the monthly showcase as a new video update format but we needed to find out how that will work out with our twice-monthly update videos.

In this feedback comment on the monthly showcase there was a proposal to record a monthly showcase video at the end of the month and record an update video in the middle of the month.

This MR adds this new definition to the Incubation Engineering handbook page.
