Fix BEM regex & Call out workflow

Why is this change being made?

Changing the job title to Backend Engineering Manager broke some of the counterparts regex. This fixes that. Additionally, I added a note about the fact that unless otherwise specified we follow the standard GitLab workflows with no modifications.
