Replace "deadline" with "due date" in `Release when it's ready` section

Why is this change being made?

We note "deadline" as a Top Misused term: https://about.gitlab.com/handbook/communication/top-misused-terms/#deadline.

This MR replaces "deadline" with "due date" on the Release when it's ready section of the handbook.
