Update GDK auto-configuration instructions

What does this MR do and why?

Updates the README as feature flags are currently not documented in our user documentation as the feature is SaaS-only.

The README continues to point there as we prepare for Product Analytics for Self-Managed via Make Product Analytics cluster deployment repos... (gitlab-org/gitlab#440199 - closed)
