Update the default value for image.tag

What does this MR do?

Judging by https://gitlab.com/gitlab-org/charts/gitlab/-/blob/master/charts/gitlab/charts/kas/templates/deployment.yaml#L47, we now use the image tag corresponding to the GitLab version for the kas sub-chart. This MR reflects this change in the sub-chart documentation.
