[Docs] Clarify how to translate from helm get values -> values for upgrade

What does this MR do?

This is a docs only MR that came from a customer upgrade: https://gitlab.zendesk.com/agent/tickets/202701

It was unclear how to transition from all of the outputted values to whats needed. This attempts to make it clearer for admins who may not be as familiar with Helm.
