docs: Fixed mixup between OpenShift/Operator
Fixed a mixup in the following sentence of the Operator docs' 'Backup and Restore' section, I think:
Backups created in a Helm-based installation can typically be restored in an OpenShiftOperator-based installation, and vice-versa.
P.S. Don't mind my username, it is funny coincidence.
