docs: update registry development environment setup steps for mac users

Why: I ran into an issue using the host flag on a Mac when running this command, i looked a bit into it and found out host networking is not compatible with docker on desktop for Mac or docker EE for Windows.

What: This MR adds more documentation on how to run the registry without the host flag on systems that don't run the container daemon directly.
