Clean up PostUploadPack tests

PostUploadPack is one of Gitaly's oldest RPC's and its tests contain lots of manual test setup code that we have helpers for now.

This change cleans up the tests to use current helpers.

I'm doing this in preparation for gitlab-com/gl-infra/scalability#1128 (closed) where we'll have to touch these tests.
