Add update-from-main verify job

What does this merge request do and why?

This MR adds a CI job (update-from-main) to simulate a developer running gdk update as if the MR was already merged into main.

While this only ensures that updating from main to main but MR is merged works, it is a good first iteration that would’ve caught the gitlab-update issue we had earlier this week.
