Date-version the lint-html Docker image

Achilleas Pipinellis - OOO until November 25th (parental leave) requested to merge ap-date-version-lint-html-image into master

We only version the Alpine and Ruby versions, but this is not the only thing that can break things. There's been times where the docs site had been updated and the upstream projects using Nanoc to build the site failed because of some URL change we did.

If we version the docs site itself, we can avoid this in the future.
