Add more Elasticsearch documentation

What does this MR do and why?

  • Adds links to useful Elasticsearch admin pages
  • Adds a troubleshooting section to analytics.md

I'd started to add this to the infrastructure runbook for the Docs site, but it'll be easier to maintain this content in our project repo, and then link back here from the runbook.
