chore: Comply with GitLab UI naming terminology

As defined in the documentation guidelines.

As noted in !953 (comment 308697829), we're not complying with our own naming terminology! This MR fixes that, by replacing all relevant instances of gitlab-ui with GitLab UI.

This also fixes refences to npm; it's not explicitly written anywhere that I can find, but it seems to be very consistently referred to as npm rather than NPM on the About npm page.
