Update ruby unit test examples

What does this MR do and why?

The unit test example for ruby cannot be used by simply copy pasting the code. I added the ruby image and the installation steps for the packages before-script. This is in line with the discussion in this MR to expand the examples and allow for direct copy-pasting.
