[doc] JH validation project only mirrors master and main-jh

What does this MR do and why?

We no longer mirror all protected branches for JH validation project, but only master and main-jh. This means it'll not mirror as-if-jh-code-sync even though it's also a protected branch.

It's already set and this is updating the document to reflect the fact.
