Update Work Item Terminology

What does this MR do and why?

There are a few opportunities to improve the work item terminology section:

  • Link to MECEFU guidance (i.e. the why).
  • Establish it as the SSoT (the architecture blueprint also has a terminology section).
  • As we start to discuss existing objects that will become Work Item Types, we need a name for that collection of objects.

Screenshots are required for UI changes, and strongly recommended for all other merge requests.
