What does this MR do and why?

Removed outdated information from the OIDC page which stated only 3 claims were available in ID token by default, and added additional columns to the claims list.

How to set up and validate locally

This can be verified using the SAMPLE OIDC app https://gitlab-oidc-pkce-demo.netlify.app/. Check the content of id_token and return value from /userinfo endpoint
