Update SCIM and SAML API examples

What does this MR do and why?

The examples in the docs for SCIM API and SAML API make use of a UID "sydney_jones" . This makes for a confusing example as it implies the username is being used as the UID, whereas our docs say that this value should not be a username.

I have updated the examples to reflect a more accurate example if using the recommended ObjectID
