Enable vite for e2e gdk tests

What does this MR do and why?

• Enable vite for gdk environment used for e2e tests
• Start gdk using native services keyword
• Remove all custom modifications /etc/hosts and other network related modifications
• Fix setting empty knapsack test file pattern
• Fix running docker network shell command each time network name is fetched in code
• Add ability to set docker network via environment variable
