Update persona links to handbook subdomain

What does this MR do and why?

about. is being redirected to handbook., but should we update the links still? These are particularly contributor-facing.

I used sd 'about.gitlab.com/handbook/product/personas' 'handbook.gitlab.com/handbook/product/personas' .gitlab/ doc/ here, but there are still hundreds of old links more:

$ rg --count 'about.gitlab.com/handbook/' . | wc -l
     427

I'd be fine with those getting included here, or directed to a follow-up MR.
