Restore GDK-in-a-box docs

What does this MR do and why?

In !149336 (merged) we removed these docs as they were duplicated.

But after some discussion in that MR we decided to move the single source of truth here.

I will raise another MR to remove the duplication from the GDK project and reference these docs instead.
