Update GitLab Pages docs to remove conflicting statements

What does this MR do and why?
This MR solves #467165 (closed) by replacing an example that used hyphens with one that uses underscores. Hyphens used to be allowed in pathPrefix, but are no longer, so we should reflect that in our docs.
