Update index.md with email change note

What does this MR do and why?

Based on the discussion in #478014 (comment 2038983607) we want to remind customers that as domain verification is currently mapped to project level (vs group level), those with a maintainer role have the ability to setup a domain and therefore edit their email to match that domain.
