What does this MR do and why?

The groups observability and product_analytics were renamed to platform_insights in gitlab-com/www-gitlab-com!135842 (merged). This MR updates the event and metrics definitions as per this guide

The changes were made running:

scripts/internal_events/product_group_renamer.rb product_analytics platform_insights
scripts/internal_events/product_group_renamer.rb observability platform_insights
