Update Emoji version 4 to use original names

What does this MR do and why?

Goes back to some of the original naming of emoji fallback assets, compatible with V3. Such as thumbs_up.png back to thumbsup.png. V4 is not in use currently, so this update doesn't effect any running code.

These were originally added in Add emoji fallback images for V4 (!168446 - merged)
