What does this MR do and why?

gitaly: Update references to git_data_dirs

omnibus-gitlab!7962 (merged) will be implementing the git_data_dirs deprecation, which partially went into effect [1] at the beginning of %17.0.

Update various documentation pages to reflect the new way of configuring storages.
