Add 10k configuration table with GCP equivalents to docs

What does this MR do?

This MR changes over the Digital Ocean configuration list to the GCP version that we've built, for the 10k environment.

2. Ensure a release milestone is set and that you merge the equivalent EE MR before the CE MR if both exist.
