Update gitaly installation from source docs to add default logging values

What does this MR do?

part of: gitaly#1729 (closed)

This MR adds default logging values in gitaly. These are necessary because now that gitlabshell is inside of gitaly, it will read from config.toml instead of gitlab-shell.yml.
