Update Gitaly auth and source install docs

Will Chandler (ex-GitLab) requested to merge wc-gitaly-auth into master

What does this MR do?

Centralize Gitaly token and Gitlab-Shell secret instructions into a single section.

Also fix source install instructions for remote Gitaly servers and TLS.
