Add Elasticsearch to Sidekiq ServerMetrics

What does this MR do?

In !32822 (merged) we introduced this instrumentation for all Elasicsearch requests as well as logged this instrumentation data. This MR makes that data available in the sidekiq prometheus metrics. After we merge this we will be able to add an extra detail to sidekiq detail graphs in Grafana to show time spent in Elasticsearch.
