Updates doc for usage data stats for Edition & Tier for Configure stage

• Adds an Edition column
• Adds Configure stage Edition based on the comment #220802 (comment 359673416)
  • Exception: The 3 metrics do not work in Core and only work in EE projects_slack_notifications_activeprojects_slack_slash_activeprojects_with_prometheus_alerts - See MR !33672 (diffs)
