Namespace redis_client metrics with gitlab_

What does this MR do?

This renames to prometheus metrics, introduced in !35992 (merged), so that they stay outside the redis_ namespace used by the redis exporter.

These metrics are so new (merged hours ago) that they are not in use anywhere yet, so we can safely rename them.
