Fix: Correct SAST docs variable groupings

What does this MR do?

Some of the variable groupings were off in our docs:

• SAST_DISABLE_BABEL is a analyzer-specific configuration
• SEARCH_MAX_DEPTH is a vulnerability filter configuration. This one is more arguable and I'm mixed on it, but it's definitely not analyzer-specific so I think this is better.

• Label as security and @ mention @gitlab-com/gl-security/appsec
• The MR includes necessary changes to maintain consistency between UI, API, email, or other methods
• Security reports checked/validated by a reviewer from the AppSec team
