Upgrade monaco-yaml to v2.5.1
What does this MR do?
Upgrades monaco-yaml to v2.5.1. This version upgrades yaml-language-server to the latest version, which has a lot of bug fixes and features.
It should also allow us to make gitlab-com/www-gitlab-com!65722 (merged) work properly.
