Remove graphql enum alphabetical sort
What does this MR do?
This MR removes the sort_by_name
from enums
in the GraphQL documentation. Most of the time, enumerated types are in a specific order relevant to their type (https://gitlab.com/gitlab-org/gitlab/-/blob/master/app/graphql/types/access_level_enum.rb for example). These enumerations should stay in their logical order and not their alphabetical order in the documentation (for example, https://docs.gitlab.com/ee/api/graphql/reference/#alertmanagementseverity)
