Remove Unicorn config examples

What does this MR do?

⚠ I am currently checking if that could affect GDK.

This is expected to be a no-op change from the main repo perspective, as it touches only .example files. I split it from the actual binary removal for that reason. Could affect GDK though (currently checking).
