Replace hardcoded default value stream names

What does this MR do?

This MR cleans up some minor VSA issues, removes some code no longer needed and some minor refactors.

• Removes the empty_stage_text file
• Removes the hardcoded DEFAULT_STAGE_NAMES, we receive an array of default stages as data-* attributes from the backend on page load
