Update docs lint image

What does this MR do?

Updates the docs lint image to the latest version. Tested in this job: https://gitlab.com/gitlab-org/gitlab/-/jobs/1508809491

After testing, I removed the docs change (was needed to trigger the job), and this should be ready to roll.
