Docs: workaround lack of multiple value variables

What does this MR do?

Add known limitation of GitLab CI, as it's currently not possible to map arrays as variable values. The question is often asked in support tickets and forums alike, when users want to avoid using multiple variables for similar values.

• Review by assigned maintainer, who can always request/require the above reviews. Maintainer's review can occur before or after a technical writer review.
• Ensure a release milestone is set.
