Rework performance docs part 1

What does this MR do and why?

We are in the process of consolidating our tooling, and with that we want to rework the current performance docs. We found that we have quite a bit of information scattered over multiple pages. The goal of this MR is to make sure the documentation is up to date, complete, and we have a single source of truth.

This will be split up into multiple MRs, where we try to move files in a separate MR and update info in separate MRs.

This MR will update the current information, a next MR will make sure we have all information available (via links?) on a single page), another MR will separate it into different files

This checklist encourages us to confirm any changes have been analyzed to reduce risks in quality, performance, reliability, security, and maintainability.
