Remove reference to unmaintained go tool

What does this MR do and why?

Update reference to go cobertura package (!51238 - merged) missed a few references to the no-longer-maintained https://github.com/t-yuki/gocover-cobertura project. This MR updates all the remaining references and simplifies the Go example instructions.
