Upgrade gitlab-exporter to v11.7.0

What does this MR do?

Diff: https://my.diffend.io/gems/gitlab-exporter/11.2.0/11.7.0

This upgrades a few dependencies, such as the Sidekiq gem, which saves a little space.

This also adds the Elasticsearch probe, which will not be enabled by default in this merge request.
