Update name of e2e pipeline in Patch Release docs

This MR updates the name of the e2e pipeline mentioned in our patch release docs.

The e2e:package-and-test-ee pipeline has been renamed to e2e:test-on-omnibus-ee as confirmed on Slack (internal, good for 90 days).
