Updated vars/RedHat.yml to use a ternary to choose the package name
depending on the release version, as it changed to dhcp-server in EL
8.

The molecule configuration has been updated to include a second VM
using the generic/centos8 vagrant box.

Finally the list of support distros has been ammended to include EL 8.
